Why coffee needs to rest
Roasting fills beans with carbon dioxide, and for the first days after roast that gas escapes faster than water can extract flavour. Brew too early and the bloom is violent, extraction is uneven, and the cup tastes sharp and hollow. This is why “fresher is better” is only half true: coffee needs a rest before it needs urgency.
Espresso and filter age differently
Espresso is the fussier method. The pressure of a 9-bar shot amplifies degassing problems, so most roasts want ten days or more of rest before they pull cleanly, and then drink beautifully for roughly four to six weeks. Filter brewing is gentler: beans are usually ready within about five days and stay in their window for around a month. Lighter roasts generally rest longer and fade slower than dark ones, which peak sooner and stale faster — treat the windows here as sensible defaults, not laws.
Making beans last
Oxygen, heat, light and moisture are the enemies, in that order. Keep beans whole and sealed — a bag with a one-way valve or an airtight container in a cupboard is fine — and grind just before brewing, since ground coffee loses aromatics within minutes rather than weeks. For a supply you cannot drink in time, freezing works far better than its reputation: portion beans into small airtight containers, freeze on arrival, and grind straight from frozen. A bag frozen in its sweet spot effectively pauses there.
