Dough Temperature Calculator
The one number that decides how fast your dough ferments — and the water temperature that gets you there.

Why bakers control dough temperature
Fermentation is a chemistry reaction, and like every chemistry reaction it runs faster when it is warm. A dough finishing its mix at 27 °C will complete bulk fermentation dramatically sooner than the same dough at 22 °C — often by hours. This is why the same recipe behaves like a different recipe in July and January, and why “bulk for four hours” is close to meaningless as an instruction on its own.
Desired dough temperature, or DDT, is how bakeries make timings repeatable. You pick the temperature you want the dough to be when mixing finishes, then adjust the one ingredient whose temperature you can easily change — the water — to land there. Most sourdough sits happily between 24 and 26 °C; enriched doughs are often kept cooler to protect the butter.
The formula
For a straight dough, multiply your target by three, then subtract the flour temperature, the room temperature and the friction factor. If you are adding a levain or preferment, multiply by four instead and subtract its temperature too — the multiplier simply counts how many temperature sources are in the mix.
The friction factor is the heat that mixing itself adds. Hand mixing contributes very little, roughly 1–2 °C. A stand mixer adds noticeably more, around 3–5 °C depending on how long you run it, and a spiral mixer more again. It is worth measuring your own once: mix a batch, record every temperature, and rearrange the formula to solve for friction. That single number then makes every future bake predictable.
When the answer looks absurd
A cold kitchen in winter can produce a required water temperature above 40 °C, and that is a genuine signal rather than an error — but be careful, because water much beyond 50 °C starts damaging yeast on contact. The better fix is usually to warm the flour instead, or to accept a lower target and simply let the bulk run longer. Conversely, in a hot kitchen the calculator will ask for fridge-cold or even iced water, which is exactly what summer baking requires.
